This vinaigrette is two things: simple + delicious. It also happens to be packed with awesome nutrients from some pretty sweet ingredients—including, quite literally, raw honey. Before we dig into this colorfully tasty recipe, let’s chat about...

Why THIS salad dressing is so sweet.

Most salad dressings out there are filled with processed ingredients like corn syrup. You’re probably thinking “corn syrup in salad dressing?!” Yep, pretty crazy, right? But sadly, it’s often the case. Luckily, a lot of great companies are starting to offer salad dressings made with awesome #RealFood ingredients, but these clean options can be expensive. That's why I chose to make this #RealFood salad dressing from scratch. It is super easy, affordable, and nutrient dense. And it’s as simple as throwing a few ingredients in a glass jar and shakin’ it up!

This superstar salad dressing is made with raw honey, which is all natural and has a lower glycemic index than other sugars (especially high fructose corn syrup), so it promotes balanced blood sugar levels. Too boot, the raw honey in this healthy salad dressing contains:   

-Live enzymes

-Antioxidants

-Antimicrobial/antibacterial properties

  But honey is just one part of the #RealFood awesomeness that goes in to this dressing...

Avocado Oil: This serves as a great source of healthy fats, which helps us absorb all those fat soluble vitamins (like A, D, E, and K) in any veggie filled salad! Most conventional salad dressings are made with canola oils, soybean oils, or other questionable vegetable oils that are easily oxidized and increase inflammation.

Lemon Juice + Apple Cider Vinegar: Both of these ingredients are tangy flavor powerhouses and add the acid component that is vital to any good salad dressing!

Garlic: Not only does this pungent lil’ guy keep vampires away and add awesome flavor to recipes, but it also happens to be known for its impressive antibacterial properties!

Strawberry Almond Salad with Honey Lemon Garlic Vinaigrette

For the Dressing:

  • 1 Tbsp. raw wildflower honey
  • 4 Tbsp. lemon juice
  • 1 Tbsp. apple cider vinegar 
  • 1/3 c. avocado oil {or olive oil}
  • 2 cloves of garlic, freshly minced
  • 1/2 tsp. pink Himalayan salt
  • pinch of black pepper

For the Salad:  

  • 2 c. of spinach {or kale, romaine, spring mix}
  • ¼ c. fresh strawberries, chopped
  • ¼ of a red onion, sliced 
  • 3 Tbsp. toasted almonds

Directions:

For the dressing, add the honey, lemon juice, vinegar, oil, garlic, salt, and pepper into a mason jar. Place the lid on the jar and make sure it is on tightly. Shake the jar until the salad dressings are emulsified.

For the salad, rinse and dry the produce. Slice any large leaves of greens into bite sized pieces. Place the chopped greens into a salad bowl. Add chopped strawberries, red onion, and toasted almonds. Drizzle with dressing and toss with tongs. Serve and enjoy!
